798. A French Porcelain Paté Tureen, ca. early 20th Century

Lidded round paté tureen with gold and brown glaze. Bottom marked "Mehun Depose France" and "1". Approx. 5"T x 5"D. Mehun-sur-Yèvre is a center of French porcelain manufacturing.

This type of mold reproduces the look of a a particularly odd type of pastry crust for which the dough is raised upward about a handled hardwood mould, shaped rather like a large, flat-bottomed darning egg. The flat-bottom is also used as a template for the lid to which the handle, with its cross hatching is applied with a luting paste. The whole affair is blind par-baked; a rather tricky business considering that other pate shapes are par-baked in fluted tin moulds, the sides of which are grooved into a flat bottom and held together with removable round clips. With this ovenproof terrine, one need only be concerned with the filling and skip the labourious pastry-making process. HT
